How to cost a packaged food product
A retail product carries a jar, a label, a case, and a retailer's margin that a dish never does. Here is the full cost stack, and the price ladder on it.
Cost the recipe exactly as you would a dish, then add what a dish never carries: the container, the closure, the label, and a share of the case it ships in. Then price it twice, because a wholesale price and a shelf price are different numbers with the retailer's margin sitting between them.
Unit cost = recipe cost per unit plus container plus closure plus label plus case share
Worked example: a 250 ml hot sauce
A batch makes 10 liters of sauce for $62.00.
Recipe cost per ml = $62.00 divided by 10,000 ml = $0.0062
Recipe cost per bottle = 250 ml x $0.0062 = $1.55
The packaging stack per bottle:
- Bottle: $0.42
- Cap: $0.08
- Label: $0.06
- Shrink band: $0.03
Cases of 12 cost $0.85 each, which is $0.07 a bottle.
Unit cost = $1.55 plus $0.59 packaging plus $0.07 case = $2.21
The packaging rule is the same, and the reason changes
Dishboard still holds the bottle separately from the recipe figure, because those are two numbers you act on differently: you reformulate a recipe and you renegotiate a bottle. What is different from a restaurant dish is that there is no channel where the bottle is absent. A dish carries a box on delivery and nothing dine-in; a hot sauce is always in a bottle.
So the recipe figure is still the thing you compare between products, and the unit cost above is the thing you price from.
Price it twice
Sell direct at $8.99 and wholesale at $4.50, and the same product carries two very different margins:
- Direct to consumer at $8.99: ($8.99 minus $2.21) divided by $8.99 = 75.4%
- Wholesale at $4.50: ($4.50 minus $2.21) divided by $4.50 = 50.9%
- The retailer, buying at $4.50 and selling at $8.99, takes 49.9%
That third line is the one people miss. A retailer is not marking up your wholesale price by a little, it is taking roughly half of the shelf price, and your wholesale price has to survive that before it reaches a customer.
Wholesale price = shelf price x (1 minus the retailer's margin)
Work backward from the shelf price you believe the product can carry, not forward from your cost. If $8.99 is what the shelf will bear and the retailer needs half of it, you have $4.50 to work with, and a $2.21 unit cost either fits inside that or the product does not work at this size.
What else belongs in the unit cost before you commit
- Minimum print runs. Labels are cheap per unit at 5,000 and expensive at 200, and the first run is usually the small one.
- Certification and testing, where a claim requires it. This is a fixed cost spread across a run, so it falls as volume rises and is brutal on a first batch.
- Freight to the retailer, which is per case rather than per unit and rewards packing density.

- Should packaging be inside the recipe figure for a retail product?
- Keep it separate, the same as any dish. The bottle is always present for a packaged product, but recipe and packaging are still two costs you act on independently, and separating them is what lets you see a supplier increase on one without it hiding inside the other.
- How do I split a shared batch across two products?
- Cost the batch once, then divide by what each product actually takes out of it. A 10 liter batch filling 20 of the 250 ml bottles and 12 larger 416 ml jars is one batch cost split by volume, not by unit count.
- What margin does a grocery retailer usually expect?
- Ask, because it varies by category and by account, and a specialty store and a national chain are different businesses. What matters more is that you ask before you set a shelf price rather than after.
- Is my first batch's cost per unit realistic?
- Almost never. Small print runs, small ingredient buys, and testing costs all land on it, which makes a first batch a poor basis for a long-term price. Cost it at the run size you expect to reach, and know the first one is worse.
